Breathe. . .you and the wine
I go through yoga phases. During those phases I love how the stretching and yoga poses make my muscles wake up, but what I really love is how the breathing makes me feel. I’m more alert, more relaxed, more in balance. Deep breathing is good for all living things, including wine.
In the bottling process we are careful to remove all the air from the bottle so the wine is not exposed to any oxygen. We use quality corks to protect the wine from air until the moment it is ready to be poured. But, don’t pour it yet! At Jessup Cellars we highly recommend opening your wines a couple of hours before you want to serve them and ideally, decant them into a wine decanter or pitcher well before serving. Decanting allows for more surface area of the wine to be aerated. This time for the wine to breathe has much the same effect that some good yoga, stretching, or exercising, or even laughing, does for you and me. The wine becomes more alert (the fruit will come forward), more relaxed, and more in balance.
Of course, if you just can’t wait and want to pop a cork and have a toast, go for it! But if you have time to take a few deep breaths along with your wine, you’ll both be better for it!
